Ingredients
For the Chips
-
2 medium zucchinis
-
¼ cup all-purpose flour (or gluten-free flour) — optional
-
2 large eggs (or flax/plant-milk substitute for vegan)
-
1 cup panko breadcrumbs or plain breadcrumbs (optional for coating)
-
¼ cup grated Parmesan cheese (optional for flavor)
-
½ tsp garlic powder
-
½ tsp paprika or smoked paprika (optional)
-
½ tsp fine sea salt
-
Olive oil or avocado oil spray
For the Dipping Sauce (Optional)
-
½ cup plain yogurt (or vegan mixed alternative)
-
2 Tbsp mayonnaise (or vegan mayo)
-
1 Tbsp lemon or lime juice
-
½ tsp garlic powder
-
Pinch of salt
-
Fresh herbs (optional — dill, parsley, or chives)
Instructions
1. Preheat & Prepare Zucchini
Preheat your air fryer to 400°F (≈200°C).
Wash and dry the zucchinis, then trim the ends and slice into thin rounds (~¼ inch thick).
Pat slices thoroughly dry with paper towels to remove excess moisture.
2. Prepare Coating (If Using)
Set up three bowls:
-
Bowl 1: flour (if using)
-
Bowl 2: beaten eggs (or vegan substitute)
-
Bowl 3: breadcrumbs mixed with Parmesan, garlic powder, paprika, and salt
For a lighter version, skip coating and toss slices simply with oil and seasoning.
3. Coat the Zucchini Slices
Dredge each slice lightly in flour, dip in egg, then press into the breadcrumb mix to coat evenly.
Place coated (or plain seasoned) slices in a single layer in the air fryer basket — avoid overlapping.
4. Air Fry
Lightly spray zucchini slices with oil.
Air fry for 8–12 minutes, flipping halfway through, until golden brown and crisp.
Cooking time varies based on slice thickness and air fryer model.
5. Make the Dip (Optional)
While chips cook, whisk together yogurt, mayo, lemon juice, garlic powder, salt, and herbs.
Chill until ready to serve.
6. Serve & Enjoy
Transfer chips to a serving plate and enjoy immediately with your dip of choice.
They’re best eaten right away for that perfect crunch.
Notes
-
Dry the zucchini slices well — moisture prevents crisping.
-
Don’t overcrowd the air fryer; air circulation ensures even cooking.
-
Monitor near the end — zucchini can brown quickly once crisp.
-
Serve fresh — chips lose crispness as they sit.
