These delicious baked apple fritters are a healthier version of the classic treat, combining tender apples with a light batter and baked until golden brown. Perfect for breakfast or a sweet snack!
Ingredients
2 cups of all-purpose flour
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup sugar
1/2 cup milk
2 large eggs
1 teaspoon vanilla extract
2 cups peeled and diced apples (about 2 medium apples)
Cooking spray or parchment paper for baking
Instructions
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or spray with cooking spray.
2. In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and sugar.
3. In another bowl, combine the milk, eggs, and vanilla extract. Mix well.
4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples gently.
5. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean from the center.
7. Allow to cool slightly before serving.
Notes
For extra flavor, you can add chopped nuts or raisins to the batter. You can also drizzle with a simple glaze made from powdered sugar and milk after baking.
