Pistachio Layer

Cream Cheese Layer

1 cup cream cheese, softened

½ cup confectioners’ sugar

Blackberry Topping

2 cups fresh (or thawed, well-drained frozen) blackberries

½ cup granulated sugar

1 tablespoon lemon juice

2 teaspoons cornstarch (for thickening)

Instructions

Prepare the Crust

Mix the crushed biscuits with melted butter.

Press the mixture firmly into the bottom of a lined 8×8 inch (or similar) pan.

Chill in the fridge for about 20 minutes to set.

Make the Pistachio Layer

In a blender or food processor, blend the ground pistachios with confectioners’ sugar and heavy cream until smooth.

Spread evenly over the chilled crust.

Chill again for about 20 minutes to firm up.

Add the Cream Cheese Layer

In a bowl, beat the softened cream cheese with powdered sugar and vanilla until smooth and creamy.

Spread gently over the pistachio layer.

In a small saucepan, combine blackberries, granulated sugar, lemon juice, and cornstarch.

Cook over medium heat until the mixture thickens and becomes jam-like. Stir often so it doesn’t burn.
