2 lbs of baby potatoes, halved
1 cup of French onion soup mix
1 cup of shredded cheddar cheese
1/2 cup of sour cream
1/2 cup of cream cheese, softened
1 tsp of garlic powder
1/2 tsp of black pepper
1/4 cup of fresh chives, chopped (optional)


Instructions

1. In a large bowl, combine the halved baby potatoes, French onion soup mix, garlic powder, and black pepper. Mix well to coat the potatoes evenly.
2. In another bowl, mix together the sour cream and cream cheese until smooth.
3. Add the creamy mixture to the potato mixture and stir until all potatoes are well coated.
4. Transfer the mixture to a crockpot and cover.
5. Cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
6. About 30 minutes before serving, sprinkle the shredded cheddar cheese on top and cover to allow it to melt.
7. Serve hot, garnished with chopped chives if desired.
