Ingredients
2 pounds of baby potatoes, halved
1/4 cup of olive oil
1 packet (about 1 oz) of ranch dressing mix
1 cup of shredded cheddar cheese
1/4 cup of grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, toss the halved baby potatoes with olive oil, ranch dressing mix, salt, and pepper until evenly coated.
3. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
4. Roast in the preheated oven for about 25-30 minutes, or until golden brown and tender, stirring halfway through.
5. Remove from the oven and sprinkle shredded cheddar cheese and Parmesan cheese over the top.
6. Return to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
7. Garnish with fresh chopped parsley before serving.
