1 medium onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) corn, drained
4 cups chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
2 cups cooked chicken, shredded
1 cup diced tomatoes (canned or fresh)
1 cup shredded cheddar cheese
Salt and pepper to taste
Tortilla strips for garnish
Fresh cilantro for garnish


Instructions

1. In a large pot over medium heat, heat the olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes.
2. Stir in the minced garlic and red bell pepper; cook for an additional 2-3 minutes.
3. Add the black beans, corn, chicken broth, cumin, chili powder, smoked paprika, and diced tomatoes. Bring to a simmer.
4. Stir in the shredded chicken and let the soup simmer for about 10-15 minutes to allow flavors to meld.
5. Season with salt and pepper to taste.
6. Serve hot topped with shredded cheddar cheese and garnished with tortilla strips and fresh cilantro.

Notes
