Ingredients
For the Chicken

450 g (1 lb) chicken breast or thighs, cut into bite-sized pieces

1 tsp garlic powder

1 tsp dried oregano

½ tsp cumin (optional)

Salt & freshly ground black pepper, to taste
For the Garlic-Yogurt Sauce

½ cup plain Greek yogurt

1 clove garlic, minced

1 tsp lemon juice

Salt & pepper, to taste
For the Bowls

2 cups cooked rice, quinoa, or couscous

1 cup chopped cucumber
-
1 cup cherry tomatoes, halved

½ red onion, thinly sliced

½ cup crumbled feta cheese
-
¼ cup sliced olives (optional)

Fresh parsley, chopped
Instructions

Cook the Chicken

In a bowl, toss chicken with olive oil, paprika, garlic powder, oregano, cumin, salt, and pepper.

Heat a skillet over medium heat and cook the chicken pieces for 5–7 minutes, until fully cooked and lightly golden.

Prepare the Garlic-Yogurt Sauce

In a small bowl, mix Greek yogurt, minced garlic, lemon juice, salt, and pepper until smooth.

Adjust seasoning to taste.

Assemble the Bowls

Divide the cooked rice or grains between 4 bowls.

Top with cooked chicken, cucumber, cherry tomatoes, red onion, feta, and olives.
