These Cookie Croissant Thanksgiving Bites are a fun and festive treat for the holiday season — flaky croissant dough meets sweet, cookie‑style dough in a bite‑sized form. They’re perfect for dessert buffets, brunch, or sharing with friends and family.


Ingredients

  • ½ cup (115 g) unsalted butter, softened

  • ¼ cup (50 g) granulated sugar

  • ¼ cup (50 g) brown sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ cup chocolate chips (or preferred mix-ins: nuts, dried


Instructions

1. Preheat Oven

Preheat your oven to 350 °F (175 °C). Line a baking sheet with parchment paper.

2. Cream Butter & Sugars

In a mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until smooth and creamy.

3. Add Egg & Vanilla

Mix in the large egg and vanilla extract until fully combined.

4. Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.

5. Fold in Mix-ins

Fold in the chocolate chips or your chosen substitutes.

6. Shape & Bake

Drop rounded tablespoons of dough (or shape into mini croissant-style bites) onto the prepared baking sheet. Bake for 12–15 minutes or until edges are golden brown.

7. Cool & Serve

Remove from the oven and let the bites cool slightly on the baking sheet before transferring to a wire rack. Optional: dust with powdered sugar for a festive touch.
