  • 2 large chicken breasts (or 4 small ones), sliced in half lengthwise
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1/2 teaspoon paprika
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken: Season the chicken with salt, pepper, and garlic powder.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. Cook the Mushrooms: In the same skillet, melt the butter. Add the mushrooms and cook for 3-4 minutes until softened.
  4. Make the Sauce: Add minced garlic, thyme, and paprika. Stir and cook for 1 minute. Pour in the chicken broth and let it simmer for 3 minutes.
  5. Add Cream & Cheese: Reduce the heat to low, stir in the heavy cream and Parmesan cheese, and let the sauce thicken for 2-3 minutes.
  6. Combine & Serve: Return the chicken to the skillet, coating it with the sauce. Let it simmer for another 5 minutes until fully cooked. Garnish with fresh parsley and serve.
