This luscious White Chocolate Strawberry Cheesecake combines a creamy cheesecake filling with rich white chocolate and fresh strawberries, sitting atop a buttery graham cracker crust. Perfect for special occasions or as a delightful dessert!
Ingredients
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the cheesecake filling:
16 oz cream cheese, softened
1 cup confectioners’ sugar
1 tsp vanilla extract
8 oz white chocolate, melted and cooled
3 large eggs
1 cup strawberries, pureed
For topping:
Fresh strawberries, for garnish
Whipped cream, for serving
Instructions
1. Preheat the oven to 325°F (160°C).
2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan to form the crust.
3. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add confectioners’ sugar and vanilla extract.
4. Stir in the melted white chocolate until well combined.
5. Add eggs one at a time, mixing on low speed until just blended. Do not overmix.
6. Fold in strawberry puree gently to create a marbled effect.
7. Pour the cheesecake batter over the prepared crust and smooth the top.
8. Bake for about 55-60 minutes or until the center is set but slightly jiggly.
9. Turn off the oven and let the cheesecake cool inside for an hour before removing it from the oven.
10. Chill in refrigerator for at least 4 hours or overnight before serving.
11. Serve topped with fresh strawberries and whipped cream.
Notes
This cheesecake can be made ahead of time and stored in the refrigerator for up to 3 days. For best results, allow it to set overnight.
