  • Author: Lina
  • Total Time: 4-6 hours

Description

This Crockpot Chicken and Stuffing recipe is the perfect comforting meal for a busy day or a cozy family dinner. The chicken comes out tender and juicy, while the stuffing absorbs all the delicious flavors of the broth, creating a hearty and satisfying dish. With minimal prep and the help of your crockpot, you’ll have a delicious meal ready in a few hours!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 package (6 oz) stuffing mix (preferably seasoned)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper (to taste)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

1. Prepare the Chicken:
Season the chicken breasts (or thighs) with salt, pepper, garlic powder, and onion powder. Place the chicken in the bottom of your crockpot.

2. Make the Stuffing Mixture:
In a separate bowl, combine the stuffing mix, cream of chicken soup, chicken broth, and sour cream. Stir until well combined.

3. Layer the Stuffing:
Spread the stuffing mixture evenly over the chicken breasts in the crockpot. Cover the crockpot with the lid.

4. Cook:
Cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and the stuffing is fully cooked.

5. Shred the Chicken (Optional):
Once the chicken is fully cooked, you can either leave it whole or shred it using two forks. Shredded chicken will mix beautifully with the stuffing and create a more cohesive dish.

6. Serve:
Serve the chicken and stuffing mixture with a sprinkle of fresh parsley for garnish, and enjoy!

Notes

  • Add Vegetables: For added nutrition, mix in frozen peas, corn, or diced carrots into the stuffing mixture before cooking.
  • Use Chicken Thighs: If you prefer dark meat, chicken thighs are a great substitute for chicken breasts. They stay moist and flavorful during cooking.
  • Add Herbs: Try adding fresh or dried herbs such as thyme, rosemary, or sage to enhance the flavor of the stuffing.
  • Make it Gluten-Free: Use gluten-free stuffing mix and ensure the cream of chicken soup is gluten-free to make this dish gluten-free.
