  • 1 cup (240ml) buttermilk
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) hot water or coffee

For the Frosting:

  • 1 cup (230g) unsalted butter, softened
  • 3 1/2 cups (440g) powdered sugar
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) heavy cream

Instructions

Making the Cake:

  1. Preheat Oven: Set your oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add Wet Ingredients: Add buttermilk, oil, eggs, and vanilla extract. Beat on medium speed until well combined.
  4. Incorporate Hot Liquid: Slowly add the hot water or coffee while mixing on low speed. The batter will be thin but smooth.
  5. Bake: Divide the batter evenly between the cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Making the Frosting:

  1. Beat Butter: In a large bowl, beat the butter until smooth and creamy.
