Ingredients
1 lb ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup chopped parsley
1 egg
1 tsp salt
1/2 tsp black pepper
1/2 tsp onion powder
1/4 tsp red pepper flakes (optional)
1 tbsp olive oil (for drizzling)
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, parsley, egg, salt, pepper, onion powder, and red pepper flakes. Mix until well combined.
3. Divide the mixture into four equal portions and shape each portion into a small loaf.
4. Place the meatloaves on a baking sheet lined with parchment paper.
5. Drizzle olive oil over each meatloaf.
6. Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C) and the tops are golden brown.
7. Let rest for a few minutes before serving.
