Description

These Southwest Egg Rolls are a perfect blend of flavors, packed with spicy chicken, black beans, and cheese. Great as an appetizer or a main dish!


Ingredients

1 cup cooked chicken, shredded
1/2 cup black beans, rinsed and drained
1/2 cup corn kernels
1/2 cup diced red bell pepper
1/4 cup diced green onion
1/2 teaspoon chili powder
1/4 teaspoon cumin
Salt and pepper to taste
8 large egg roll wrappers
1 cup shredded cheddar cheese
Oil for frying


Instructions

1. In a large bowl, combine the chicken, black beans, corn, red bell pepper, green onion, chili powder, cumin, salt, and pepper. Mix well.
2. Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the filling in the center.
3. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.
4. Heat oil in a deep skillet or fryer over medium heat. Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
5. Remove from oil and drain on paper towels. Serve warm with your favorite dipping sauce.

Notes

You can bake these egg rolls at 400°F (200°C) for 15-20 minutes if you prefer a healthier option. Brush them lightly with oil before baking for extra crispiness.
