  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • 1 1/2 cups elbow macaroni, uncooked
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • Optional toppings: chopped green onions, sour cream, jalapeños

Instructions

  1. In a large pot or deep skillet, cook the ground beef over medium heat until browned. Drain any excess grease.
  2. Add the diced onion and garlic to the pot and sauté until softened, about 2 minutes.
  3. Stir in the diced tomatoes, tomato sauce, kidney beans, beef broth, chili powder, cumin, paprika, salt, and pepper.
  4. Bring the mixture to a simmer, then add the uncooked macaroni.
  5. Cover and cook for about 12-15 minutes, stirring occasionally, until the pasta is tender.
  6. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  7. Serve hot, garnished with your favorite toppings.
