- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 cups beef broth
- 1 1/2 cups elbow macaroni, uncooked
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- Optional toppings: chopped green onions, sour cream, jalapeños
Instructions
- In a large pot or deep skillet, cook the ground beef over medium heat until browned. Drain any excess grease.
- Add the diced onion and garlic to the pot and sauté until softened, about 2 minutes.
- Stir in the diced tomatoes, tomato sauce, kidney beans, beef broth, chili powder, cumin, paprika, salt, and pepper.
- Bring the mixture to a simmer, then add the uncooked macaroni.
