Description
This savory mushroom rice is perfect for any meal, whether as a side dish or a main course. It’s rich in flavor and surprisingly easy to make!
Ingredients
1 cup of long-grain rice
2 cups of vegetable or chicken broth
1 cup of sliced mushrooms (button, cremini, or your choice)
1 medium onion, finely chopped
2 cloves of garlic, minced
2 tablespoons of olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Rinse the rice under cold water until the water runs clear. Drain well.
2. In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent.
3. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are golden brown.
4. Stir in the rinsed rice and cook for another minute to toast it slightly.
5. Pour in the vegetable or chicken broth and bring to a boil.
6. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and has absorbed all the liquid.
7. Remove from heat and let it sit covered for an additional 5 minutes.
8. Fluff with a fork, season with salt and pepper to taste, and garnish with fresh parsley before serving.
Notes
This mushroom rice pairs well with grilled meats or can be enjoyed on its own as a vegetarian dish.
