Ingredients
For the Crust Layer
- 1½ cups graham cracker crumbs
-
⅓ cup packed brown sugar
-
1 tsp ground cinnamon
-
¼ cup unsalted butter, melted
For the Cheesecake Filling
-
16 oz (450 g) cream cheese, softened
-
2 tsp lemon juice
-
1½ cups heavy cream
-
⅓ cup granulated sugar
-
3 oz cinnamon whiskey (such as Fireball), divided
For the Topping
-
1 can (≈ 21 oz) cherry pie filling
-
2 oz cinnamon whiskey
-
Maraschino cherries (optional)
Instructions
1. Prepare the Crust Layer
-
In a medium bowl, mix graham crumbs, brown sugar, cinnamon, and melted butter.
-
Spoon 1–2 tablespoons of the mixture into each shot glass.
-
Press down lightly to form a compact crust.
2. Make the Cheesecake Filling
-
Beat softened cream cheese until smooth and creamy.
-
Add lemon juice and sugar; mix until fully incorporated.
-
On medium speed, slowly add heavy cream and 1–2 oz of the whiskey.
-
Mix until the filling becomes fluffy and holds soft peaks.
3. Assemble the Layers
-
Pipe or spoon the cheesecake mixture into each shot glass, filling about ¾ full.
-
In a bowl, mix cherry pie filling with the remaining 2 oz whiskey.
-
Spoon a layer of the cherry mixture over the cheesecake.
-
Top with a maraschino cherry, if desired.
4. Chill & Serve
-
Cover and refrigerate for 1–2 hours or until fully set.
-
Serve chilled. Optional: dust lightly with cinnamon or citrus zest.
Notes
-
Use room-temperature cream cheese for a silky smooth filling.
-
Add the heavy cream slowly to ensure the filling whips properly.
-
Chill thoroughly so layers firm up and don’t blend together.
-
Adjust the whiskey amount to suit your taste — reduce for milder shots or increase slightly for a stronger finish.
-
Can be made 1 day ahead, but add the garnish just before serving.
-
Serve cold; the filling softens at room temperature.
