This Ginger Soy Glazed Cod is a quick and flavorful dish that combines the warm spice of ginger with the umami of soy sauce. Perfect for a weeknight dinner!
Ingredients
4 cod fillets (about 6 oz each)
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon cornstarch (optional, for thickening)
2 green onions, sliced (for garnish)
Instructions
1. In a small bowl, whisk together soy sauce, honey, grated ginger, minced garlic, sesame oil, and rice vinegar. If you prefer a thicker glaze, mix in cornstarch dissolved in a little water.
2. Place the cod fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 15 minutes or up to an hour in the refrigerator.
3. Preheat your oven to 400°F (200°C).
4. Arrange the marinated fish on a baking sheet lined with parchment paper. Reserve the marinade.
5. Bake for about 12-15 minutes or until the fish flakes easily with a fork.
6. While the cod is baking, pour the reserved marinade into a saucepan and bring it to a simmer over medium heat. Allow it to cook for about 3-5 minutes until slightly thickened.
7. Once the cod is done, drizzle the thickened glaze over the fish and garnish with sliced green onions before serving.
