For the Shrimp

  • 1 lb (450 g) large shrimp, peeled and deveined

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 tablespoon lemon zest

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon Italian seasoning or oregano

  • ½ teaspoon paprika (optional)

  • Salt and black pepper, to taste

  • 12 tablespoons chopped fresh parsley

For Serving (Optional)

  • Lemon wedges

  • Extra parsley

  • Grilled veggies, rice, or pasta


Instructions

1. Prepare the Shrimp

Pat the shrimp dry with a paper towel. This helps them develop a better sear or char on the grill.

2. Make the Marinade

In a bowl, whisk together:

  • Olive oil

  • Garlic

  • Lemon zest

  • Lemon juice

  • Italian seasoning

  • Paprika

  • Salt and pepper

Add shrimp and toss well to coat. Marinate for 10–15 minutes (don’t exceed 20 minutes — the lemon can start to “cook” the shrimp).

3. Grill the Shrimp

Preheat your grill or grill pan to medium-high heat.
Place shrimp on the grill and cook for 2–3 minutes per side, until pink, opaque, and lightly charred.

4. Finish & Serve

Transfer to a plate and sprinkle with fresh parsley.
Squeeze extra lemon juice if desired.
Serve hot over rice, salads, or alongside grilled vegetables.

Notes

  • Don’t marinate shrimp too long — the lemon juice can make them mushy.

  • Shrimp cook fast — remove as soon as they turn pink and opaque.

  • For indoor cooking, a grill pan or skillet works just as well.
