Instructions
- Crush the Cookies: Place the Lotus Biscoff cookies in a food processor and blend until you get fine crumbs.
- Mix with Cream Cheese: In a mixing bowl, combine the cookie crumbs with cream cheese and Lotus Biscoff spread. Mix well until a smooth dough forms.
- Shape the Truffles: Roll the mixture into small balls (about 1 inch in diameter) and place them on a lined baking tray. Freeze for 15-20 minutes until firm.
- Melt the Chocolate: In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring between each until smooth.
- Coat the Truffles: Dip each truffle into the melted white chocolate, ensuring an even coating. Place them back on the tray.
- Garnish & Set: Sprinkle some crushed Biscoff cookies on top for added texture and flavor. Let the truffles set at room temperature or refrigerate until firm.
