This enchanting Butterbeer Cheesecake combines the creamy richness of classic cheesecake with the warm, buttery flavors reminiscent of the beloved wizarding drink.
Ingredients
For the crust:
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup brown sugar
For the cheesecake filling:
2 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
½ cup butterscotch sauce
½ cup heavy cream
For topping:
Whipped cream (optional)
Butterscotch sauce for drizzling (optional)
Instructions
1. Preheat your oven to 325°F (160°C).
2. In a medium bowl, mix graham cracker crumbs, melted butter, and brown sugar until well combined. Press mixture into the bottom of a 9-inch springform pan.
3. In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
4. Add in the eggs one at a time, mixing well after each addition. Stir in vanilla extract, butterscotch sauce, and heavy cream until fully incorporated.
5. Pour the cheesecake filling over the crust in the springform pan.
6. Bake for 50-60 minutes or until the center is set but still slightly jiggly.
7. Turn off the oven and let the cheesecake cool inside for about an hour, then remove from oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
8. Before serving, top with whipped cream and drizzle with additional butterscotch sauce if desired.
