This Mexican White Trash Casserole is a quick and easy dinner option that combines the flavors of classic Mexican cuisine with the comfort of a cheesy casserole. Perfect for busy weeknights!
Ingredients
1 pound ground beef or turkey
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
2 cups cooked white rice
2 cups shredded cheddar cheese
1 packet taco seasoning
1 cup sour cream
Salt and pepper to taste
Chopped green onions for garnish (optional)
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and cooked rice into the skillet. Mix well and let it simmer for about 5 minutes.
4. In a greased 9×13 inch baking dish, layer half of the meat mixture on the bottom.
5. Spread half of the sour cream over the meat mixture followed by half of the shredded cheese.
6. Repeat layers with remaining ingredients.
7. Cover with aluminum foil and bake for 25 minutes.
8. Remove foil and bake for an additional 10 minutes or until cheese is bubbly and golden brown.
9. Let cool for a few minutes before serving, garnish with chopped green onions if desired.
Notes
This casserole can be customized by adding your favorite vegetables or using different types of cheese. It’s also great for meal prep!
