Description

These No-Bake Chocolate Peanut Butter Truffles are rich, creamy, and irresistibly smooth, featuring a peanut butter center coated in glossy chocolate. They require no baking, come together with just a few simple ingredients, and make an elegant treat for parties, gifting, or anytime you’re craving a decadent bite-sized dessert.

Ingredients

Scale

Filling

  • 1 cup creamy peanut butter

  • 2 tablespoons unsalted butter, softened

  • ½ cup powdered sugar

  • ¼ teaspoon salt

Chocolate Coating

  • 10 oz dark or semi-sweet chocolate, chopped (or chocolate chips)

  • 1 tablespoon coconut oil or vegetable shortening (optional, for a smoother shell)

Optional Decorations

  • Melted peanut butter for drizzling

  • Crushed toffee bits

  • Chopped peanuts

  • Mini candies

Instructions

1. Prepare the Peanut Butter Centers

In a mixing bowl, combine peanut butter, softened butter, powdered sugar, and salt. Stir until you have a thick, smooth dough.
Roll into 1-inch balls and place on a parchment-lined tray.
Freeze for 20–25 minutes until firm.

2. Melt the Chocolate

Place the chopped chocolate and coconut oil in a microwave-safe bowl.
Heat in 30-second intervals, stirring each time, until smooth and fully melted.
Alternatively, melt using a double boiler.

3. Dip the Truffles

Remove the chilled peanut butter balls from the freezer.
Dip each one into the melted chocolate using a fork or dipping tool.
Let excess chocolate drip off, then place on parchment.

4. Decorate (Optional)

While the coating is still wet, drizzle melted peanut butter or add toppings like toffee bits, chopped peanuts, or a sprinkle of salt.

5. Chill & Serve

Refrigerate the truffles for 15–20 minutes to set the chocolate.
Serve chilled or at room temperature.

Notes

  • If the peanut butter mixture is sticky, add a bit more powdered sugar.

  • Freezing the centers helps them hold their shape during dipping.

  • Don’t overheat the chocolate — it can seize.

  • Let chocolate fully set before packaging or stacking.
