  • 3 tablespoons chia seeds

  • ½1 cup pumpkin puree (canned or cooked)

  • 1 cup milk (dairy or plant-based)

  • 23 teaspoons sweetener (maple syrup, honey, or other)

  • ½ teaspoon vanilla extract

  • ½1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, ginger, clove)

  • Pinch of salt

Optional Toppings

  • Whipped cream or coconut cream

  • Chopped nuts (pecans, walnuts)

  • Extra sprinkle of pumpkin pie spice

  • Fresh fruit or berries


Instructions

1. Mix the Base

In a bowl or jar, combine chia seeds, pumpkin puree, milk, sweetener, vanilla extract, pumpkin pie spice, and salt. Stir thoroughly until evenly mixed.

2. Let the Seeds Soak

Let the mixture sit for about 5 minutes, then stir again to prevent clumping.

3. Refrigerate

Cover and refrigerate for at least 2 hours, or overnight, so the chia seeds can fully absorb the liquid and thicken.

4. Stir Before Serving

Give the pudding a good stir to make it smooth and uniform before serving.

5. Serve with Toppings

 

Divide into bowls or jars and add toppings like nuts, fruit, whipped cream, or extra pumpkin pie spice.

Notes

  • Use fine-ground pumpkin pie spice for even flavor distribution.

  • For a smoother texture, blend the mixture with a high-speed blender before chilling.

  • If too thick after chilling, stir in a little extra milk to loosen.

 

  • Stir a few minutes after first mixing to avoid clumps forming.
