Description
This Pumpkin Pie Chia Pudding is a wholesome and satisfying dessert or breakfast option — combining the warm, cozy flavors of pumpkin pie with the nutritional benefits of chia seeds. Naturally sweetened and easy to prep, it’s perfect for make-ahead meals, snacks, or a light dessert.
Ingredients
For the Pudding
-
3 tablespoons chia seeds
-
½–1 cup pumpkin puree (canned or cooked)
-
1 cup milk (dairy or plant-based)
-
2–3 teaspoons sweetener (maple syrup, honey, or other)
-
½ teaspoon vanilla extract
-
½–1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, ginger, clove)
-
Pinch of salt
Optional Toppings
-
Whipped cream or coconut cream
-
Chopped nuts (pecans, walnuts)
-
Extra sprinkle of pumpkin pie spice
-
Fresh fruit or berries
Instructions
In a bowl or jar, combine chia seeds, pumpkin puree, milk, sweetener, vanilla extract, pumpkin pie spice, and salt. Stir thoroughly until evenly mixed.
Let the mixture sit for about 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 2 hours, or overnight, so the chia seeds can fully absorb the liquid and thicken.
Give the pudding a good stir to make it smooth and uniform before serving.
Divide into bowls or jars and add toppings like nuts, fruit, whipped cream, or extra pumpkin pie spice.
Notes
-
Use fine-ground pumpkin pie spice for even flavor distribution.
-
For a smoother texture, blend the mixture with a high-speed blender before chilling.
-
If too thick after chilling, stir in a little extra milk to loosen.
-
Stir a few minutes after first mixing to avoid clumps forming.
