Description

This Shamrock Lasagna is a delightful twist on the classic Italian dish, featuring layers of green spinach pasta, creamy ricotta, and flavorful pesto, perfect for St. Patrick’s Day or any festive occasion.


Ingredients

9 lasagna noodles
2 cups fresh spinach
1 cup ricotta cheese
2 cups marinara sauce
1 cup pesto sauce
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste


Instructions

1. Preheat the oven to 375°F (190°C).
2. Cook the lasagna noodles according to package instructions until al dente; drain and set aside.
3. In a bowl, mix ricotta cheese with fresh spinach, salt, and pepper.
4. Spread a layer of marinara sauce in the bottom of a 9×13 inch baking dish.
5. Layer three lasagna noodles over the sauce, followed by half of the ricotta-spinach mixture, half of the pesto, and one-third of the mozzarella cheese.
6. Repeat the layering process with another three noodles, remaining ricotta-spinach mixture, remaining pesto, and another third of the mozzarella cheese.
7. Top with the final three noodles, remaining marinara sauce, remaining mozzarella cheese, and sprinkle with Parmesan cheese.
8. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
9. Let stand for 10 minutes before slicing and serving.

Notes

This Shamrock Lasagna can be made ahead of time; just store it in the refrigerator before baking. You can also substitute any greens or sauces based on your preference.
