This spicy shakshouka is a delightful twist on the classic dish, packed with flavor and protein from the beans. Perfect for breakfast, brunch, or any time of day!
Ingredients
2 tablespoons olive oil
1 onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon chili powder (adjust to taste)
1 can (14 oz) diced tomatoes
1 can (15 oz) cannellini beans or chickpeas, rinsed and drained
4 large eggs
Salt and pepper to taste
Fresh parsley or cilantro for garnish
Instructions
1. In a large skillet, heat olive oil over medium heat. Add the onion and bell pepper; sauté until softened, about 5-7 minutes.
2. Stir in the garlic, cumin, smoked paprika, and chili powder; cook for another minute until fragrant.
3. Add the diced tomatoes (with juices) and beans; season with salt and pepper. Simmer for about 10 minutes until slightly thickened.
4. Create wells in the sauce and carefully crack an egg into each well. Cover the skillet and cook for about 5-8 minutes, or until the eggs are set to your liking.
5. Remove from heat and garnish with fresh parsley or cilantro before serving.
Notes
This shakshouka can be served with crusty bread or over rice for a heartier meal. Feel free to adjust the spice levels based on your preference!
