This Ultimate Cheesy Hasselback Potatoes recipe features crispy, golden-brown potatoes loaded with cheese and topped with fresh herbs. Perfect as a side dish or a main attraction!
Ingredients
4 medium-sized russet potatoes
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup unsalted butter, melted
3 cloves garlic, minced
Salt and black pepper to taste
1 tablespoon fresh chives, chopped (for garnish)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
1. Preheat the oven to 425°F (220°C).
2. Wash and scrub the potatoes thoroughly. Pat them dry with a towel.
3. Using a sharp knife, make thin slices across each potato, being careful not to cut all the way through (leave about 1/4 inch at the bottom).
4. Place the sliced potatoes on a baking sheet lined with parchment paper.
5. In a small bowl, mix melted butter, minced garlic, salt, and pepper. Brush this mixture generously over each potato, allowing it to seep between the slices.
6. Bake in the preheated oven for about 45 minutes or until the potatoes are tender and crispy on the edges.
7. Remove from the oven and sprinkle with cheddar and Parmesan cheese between the slices of each potato.
8. Return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
9. Remove from oven, garnish with fresh chives and parsley before serving.
