Equipment

  • 1 air fryer basket to hold potatoes
  • 1 fork for poking potatoes

Ingredients

  • 2 to 4 medium-large russet or baking potatoes
  • 1 to 2 tablespoons olive oil or light oil
  • Salt sea salt or kosher to taste
  • Optional: black pepper or preferred seasonings

Instructions

  • Wash and scrub potatoes under cold water, then pat dry. Poke holes evenly all over each potato with a fork.
  • Rub each potato lightly with olive oil and sprinkle evenly with salt and optional seasonings.
  • Place potatoes in air fryer basket spaced apart to allow air circulation.
  • Set air fryer to 400°F (200-205°C) and cook for 35 to 50 minutes, flipping halfway, until skins are crisp and centers are tender.
  • Remove potatoes, let cool slightly, slice open, fluff inside with a fork, and add desired toppings.

Notes

  • Use similarly sized potatoes for even cooking.
  • Do not wrap potatoes in foil to keep skins crisp.
  • Cook in batches if air fryer is small.
  • Store cooled leftovers refrigerated and reheat in air fryer to crisp skin.
  • Top with beans, chili, or veggies for a complete meal.
