Ingredients
  

  • 2 medium zucchini sliced into rounds or sticks
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs or panko
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika optional
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • Optional: Italian seasoning or dried parsley

Instructions
 

  • Wash and dry zucchini; slice evenly into rounds or sticks.
  • Toss zucchini in a bowl with olive oil until lightly coated.
  • In a separate bowl, combine Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, black pepper, and optional herbs.
  • Add zucchini to the breadcrumb mixture and toss until well coated on all sides.
  • Preheat air fryer to 375 °F (190 °C).
  • Arrange zucchini in a single layer in the air fryer basket; cook in batches if necessary.
  • Air fry for 8 to 10 minutes, flipping halfway through, until golden and crispy.
  • Serve immediately while hot; optionally with marinara, garlic yogurt, or ranch sauce for dipping.

Notes

  • Do not overcrowd air fryer basket to ensure crispiness.
  • Lightly spray with oil before air frying for extra crunch.
  • Best consumed fresh as zucchini softens when stored.
