Ingredients
  

  • 4 slices bread sourdough, whole grain, or country loaf
  • 1-2 tablespoons olive oil or butter for toasting
  • 2 ripe avocados
  • 8 slices cooked bacon crispy or preferred doneness
  • 4 large eggs
  • Salt and freshly ground black pepper to taste
  • Optional: red pepper flakes everything-bagel seasoning, or hot sauce
  • Optional: lemon or lime juice for brightening avocado

Instructions
 

  • Brush bread slices with olive oil or butter and toast until golden and crisp using toaster, oven, or skillet.
  • Cut avocados in half, remove pits, and scoop flesh into a bowl.
  • Mash avocado lightly with a fork; season with salt, pepper, and optional lemon or lime juice.
  • Cook eggs as desired: fry in skillet until whites are set, poach gently in simmering water with vinegar, or scramble until fluffy.
  • Spread mashed avocado evenly on each toast slice.
  • Layer crispy bacon slices over the avocado.
  • Top each toast with a cooked egg.
  • Season with extra salt, pepper, and optional red pepper flakes, everything seasoning, or hot sauce to taste.
  • Serve immediately while warm.
