  • 1 whisk for dressing

Ingredients

  • 2 ripe avocados diced
  • 2 cups cherry or grape tomatoes halved
  • 1 to 1 1/2 cups corn kernels fresh, grilled, or thawed from frozen
  • 1/4 red onion thinly sliced
  • 2 to 3 tablespoons fresh cilantro or parsley chopped
  • 2 to 3 tablespoons olive oil
  • 1 to 2 tablespoons lime or lemon juice
  • Salt and freshly ground black pepper to taste

Instructions

Notes

  • Grilled corn adds a smoky sweetness that complements creamy avocado.
  • Try basil or parsley instead of cilantro for a different herb flavor.
  • Black beans, cucumbers, or queso fresco can be added for variety.
  • Pairs well with grilled meats, fish, or picnic spreads.
