- 4 boneless skinless chicken breasts

- 1 teaspoon garlic powder
- 1 to 2 tablespoons olive oil
- 8 slices bacon cooked and crumbled
- 1 small shallot or ½ small onion thinly sliced
- 1 cup fresh or jarred cranberries or rehydrated dried cranberries
- 1 to 1½ cups brie cheese sliced or cubed
- Optional: fresh thyme or parsley for garnish
Season chicken breasts on both sides with salt, pepper, and garlic powder.
Heat olive oil in a skillet over medium-high heat; sear chicken until golden, about 4 to 5 minutes per side.
Transfer seared chicken to a baking dish.
In the same skillet, add more oil if needed and sauté shallots or onions until softened.
Add cranberries to the skillet and cook briefly until they begin to soften.
Place the sautéed cranberry mixture evenly over each chicken breast in the baking dish.
Top each chicken breast with sliced or cubed brie and sprinkle crumbled bacon on top.
Bake in a preheated 375°F oven for 15 to 20 minutes, until chicken is fully cooked and brie is melted and bubbly.
Garnish with fresh thyme or parsley if desired, and serve warm.
