- 2 slices sturdy bread e.g. sourdough or country loaf
- 2 –4 slices bacon
- 1 –2 slices cheddar cheese or melty cheese of choice
- 1 –2 tablespoons softened butter for toasting
- Optional: thin slices of onion caramelized or raw
- Optional: thin slices of tomato
Cook bacon in a skillet over medium heat until crispy, then drain on paper towels.
Spread a thin layer of softened butter on one side of each bread slice.
Assemble sandwich by placing cheese on the non-buttered side of one slice, add bacon and optional onion or tomato, then top with the other slice, buttered side out.
Heat a clean skillet over medium-low heat, place sandwich inside, press gently with spatula or cover with lid, and cook 3–5 minutes per side until golden and cheese is melted.
Remove sandwich, let rest for a minute, then cut in half and serve warm.
