Ingredients
  

  • 1 lb andouille sausage sliced
  • 2 lbs potatoes diced
  • 1 tablespoon olive oil
  • 1 bell pepper sliced
  • ½ onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • ½ teaspoon Cajun seasoning
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: ½ teaspoon red pepper flakes
  • Optional: Fresh parsley for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper or grease.
  • In a large bowl, toss the diced potatoes with olive oil, paprika, Cajun seasoning, garlic powder, salt, and black pepper.
  • Spread the seasoned potatoes evenly on the baking sheet. Add the sliced andouille sausage, bell pepper, onion, and minced garlic.
  • Toss all ingredients together on the baking sheet to combine evenly.
  • Roast in the oven for 35–40 minutes, stirring halfway through, until potatoes are tender and golden, and sausage is slightly crispy.
  • Garnish with fresh parsley if desired and serve warm.

Notes

  • Cut potatoes into small, even pieces for quicker cooking.
  • Use sweet potatoes as an alternative for different flavor.
  • Roasting at high heat provides crispier edges.
