Equipment

  • 1 skillet for cooking quesadillas
  • 1 mixing bowl for mixing chicken and BBQ sauce

Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • ½ to ¾ cup BBQ sauce adjust to taste
  • 1½ to 2 cups shredded cheese cheddar, Monterey Jack, or blend
  • 8 flour tortillas 8-inch size
  • 1 small red onion thinly sliced (optional)
  • Butter or oil for cooking
  • Optional toppings: sliced jalapeños cilantro, or green onions

Instructions
 

  • In a mixing bowl, combine the cooked chicken with BBQ sauce until evenly coated.
  • Lay one tortilla flat and sprinkle shredded cheese over half of it, then add a portion of the BBQ chicken mixture on top of the cheese.
  • Add more cheese over the chicken as desired, then fold the tortilla over to enclose the filling.
  • Heat a skillet over medium heat and add butter or oil.
  • Place the folded quesadilla in the skillet and cook for 2–3 minutes until the bottom is golden and cheese starts to melt.
  • Flip the quesadilla and cook the other side until golden and cheese is fully melted.
  • Repeat the cooking process with remaining tortillas and filling.
  • Cut quesadillas into wedges and serve warm with extra BBQ sauce, sour cream, or favorite dipping sauce.

Notes

  • Use a blend of cheeses for gooey, flavorful quesadillas.
  • Add jalapeños or hot sauce for a spicy kick.
  • Serve with ranch, cilantro, or lime wedges for extra flavor.
  • Pairs well with a side salad, chips, or coleslaw.
