Ingredients
  

  • 1 medium butternut squash peeled, seeded, and cubed
  • 2-3 apples Honeycrisp or Granny Smith, peeled and sliced
  • 2-3 tablespoons melted butter or olive oil
  • 2-3 tablespoons brown sugar or maple syrup optional
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • Optional: chopped pecans or walnuts for topping
  • Optional: honey or maple syrup for drizzling

Instructions
 

  • Preheat the oven to 375°F and grease or line a baking dish with parchment paper.
  • In a large bowl, toss the cubed butternut squash and sliced apples with melted butter, brown sugar or maple syrup if using, cinnamon, nutmeg, and salt until evenly coated.
  • Spread the mixture evenly in the prepared baking dish and sprinkle chopped nuts on top if desired.
  • Bake for 30 to 40 minutes, stirring once halfway through, until squash is tender and lightly caramelized and apples are soft.
  • Remove from oven and let cool slightly, then drizzle with honey or maple syrup if desired before serving warm.

Notes

  • Use sweet apples like Fuji or Gala for balanced flavor.
  • Add a pinch of ginger or allspice to enhance spices.
  • Cover with foil during baking for softer texture.
  • Serve alongside roasted meats or with yogurt for dessert.
