- 1 medium butternut squash peeled, seeded, and cubed
- 2-3 apples Honeycrisp or Granny Smith, peeled and sliced
- 2-3 tablespoons melted butter or olive oil
- 2-3 tablespoons brown sugar or maple syrup optional
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- Optional: chopped pecans or walnuts for topping
- Optional: honey or maple syrup for drizzling
Preheat the oven to 375°F and grease or line a baking dish with parchment paper.
In a large bowl, toss the cubed butternut squash and sliced apples with melted butter, brown sugar or maple syrup if using, cinnamon, nutmeg, and salt until evenly coated.
Spread the mixture evenly in the prepared baking dish and sprinkle chopped nuts on top if desired.
Bake for 30 to 40 minutes, stirring once halfway through, until squash is tender and lightly caramelized and apples are soft.
