Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 2 to 3 garlic cloves minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon mustard yellow or Dijon
  • 1 tablespoon ketchup
  • 2 cups uncooked pasta elbows or preferred shape
  • 3 cups shredded cheese cheddar or blend
  • 2 to 3 cups milk
  • 2 large eggs
  • Optional toppings: diced pickles extra ketchup, mustard, or sliced tomatoes

Instructions
 

  • Preheat oven to 350 °F and grease a baking dish.
  • Cook ground beef and chopped onion in a large skillet over medium heat until browned.
  • Add minced garlic, salt, pepper, onion powder, mustard, and ketchup; simmer briefly and remove from heat.
  • Boil salted water in a pot, cook pasta until just al dente, then drain.
  • Whisk together milk and eggs in a large bowl until smooth.
  • Combine cooked pasta and beef mixture with milk-egg mixture, stirring well.
  • Pour mixture into prepared baking dish and sprinkle shredded cheese evenly on top.
  • Bake for 25 to 30 minutes until cheese is melted, bubbly, and lightly golden.
  • Let cool slightly before serving, adding optional toppings if desired.

Notes

  • Use a cheddar and Monterey Jack blend for ideal melt and flavor.
  • Add bell peppers or mushrooms to the beef mixture for extra veggies.
  • Assemble the casserole the night before for easy meal prep.
