- 1 lb ground beef
- 1 small onion finely chopped
- 2 –3 garlic cloves minced
- 1 packet taco seasoning or equivalent homemade mix
- 14 oz can diced tomatoes with green chiles
- 14 oz can refried beans or black beans drained
- 2 –3 cups shredded cheese cheddar, Monterey Jack, or Mexican blend
- Optional toppings: sliced jalapeños black olives, sour cream, green onions, cilantro
- Tortilla chips for serving
Cook ground beef with chopped onion in a skillet over medium heat until browned, breaking it apart; drain any excess fat.
Add minced garlic and taco seasoning to the beef; cook for about 1 minute until fragrant.
Stir in diced tomatoes with green chiles and simmer for a few minutes until heated through.
Spread the refried or black beans evenly in a baking dish or oven-safe skillet.
Layer the seasoned beef mixture over the beans.
Sprinkle shredded cheese generously on top.
Bake in a preheated oven at 350°F (180°C) for 10–15 minutes until cheese is melted and bubbly.
Remove from oven and add optional toppings as desired. Serve warm with tortilla chips.
