Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 2 –3 garlic cloves minced
  • 1 packet taco seasoning or equivalent homemade mix
  • 14 oz can diced tomatoes with green chiles
  • 14 oz can refried beans or black beans drained
  • 2 –3 cups shredded cheese cheddar, Monterey Jack, or Mexican blend
  • Optional toppings: sliced jalapeños black olives, sour cream, green onions, cilantro
  • Tortilla chips for serving

Instructions
 

  • Cook ground beef with chopped onion in a skillet over medium heat until browned, breaking it apart; drain any excess fat.
  • Add minced garlic and taco seasoning to the beef; cook for about 1 minute until fragrant.
  • Stir in diced tomatoes with green chiles and simmer for a few minutes until heated through.
  • Spread the refried or black beans evenly in a baking dish or oven-safe skillet.
  • Layer the seasoned beef mixture over the beans.
  • Sprinkle shredded cheese generously on top.
  • Bake in a preheated oven at 350°F (180°C) for 10–15 minutes until cheese is melted and bubbly.
  • Remove from oven and add optional toppings as desired. Serve warm with tortilla chips.

Notes

  • Add hot sauce or extra jalapeños for more heat.
  • Use black or pinto beans as alternatives.
  • Mix cheeses for better flavor and meltiness.
  • Serve alongside salsa, guacamole, or pico de gallo.
