- 3 to 4 large potatoes sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 lb 450 g Italian sausage, cooked and crumbled
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup sour cream optional
- 2 to 3 green onions sliced (optional)
- Bacon bits optional
- Fresh parsley optional
