Ingredients
  

  • 3 to 4 large potatoes sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 lb 450 g Italian sausage, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup sour cream optional
  • 2 to 3 green onions sliced (optional)
  • Bacon bits optional
  • Fresh parsley optional

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Arrange the potato slices in a single layer on the prepared baking sheet.
  • Brush the potato slices with olive oil and season with salt and black pepper.
  • Bake the potatoes for 20 minutes, flipping halfway through, until tender and lightly crispy.
  • Remove the baking sheet from the oven and top each potato slice with cooked sausage and shredded cheddar cheese.
  • Return the baking sheet to the oven and bake for an additional 5 to 10 minutes until the cheese is melted and bubbly.
  • Optionally, garnish the potato slices with sour cream, green onions, bacon bits, and fresh parsley.
  • Serve the cheesy sausage potato slices warm.

  • Slice potatoes evenly for consistent cooking.
