- 4 cups cooked boneless skinless chicken breasts cubed or shredded
- 8 slices cooked bacon chopped
- 3 cloves garlic minced
- 1 cup ranch dressing
- 1 cup shredded mozzarella cheese divided
- 1 cup shredded cheddar cheese divided
- 5 cups broccoli florets optional
- 1 lb frozen spinach thawed and well drained (optional)
Preheat the oven to 375°F (191°C).
If using frozen spinach, thaw and squeeze out excess water. If using broccoli, blanch in boiling water for 1-2 minutes until bright green.
In a large bowl, combine chicken, bacon, drained spinach or broccoli, garlic, ranch dressing, and half of the mozzarella and cheddar cheeses. Stir well.
Transfer mixture to a 9x13 inch casserole dish or mix directly in the dish.
Optional: Add 1-3 teaspoons ranch seasoning mix for extra flavor.
Top with the remaining shredded mozzarella and cheddar cheeses.
Bake for about 15 minutes until hot and bubbly.
