  • 1 pot for blanching broccoli if using

Ingredients
  

  • 4 cups cooked boneless skinless chicken breasts cubed or shredded
  • 8 slices cooked bacon chopped
  • 3 cloves garlic minced
  • 1 cup ranch dressing
  • 1 cup shredded mozzarella cheese divided
  • 1 cup shredded cheddar cheese divided
  • 5 cups broccoli florets optional
  • 1 lb frozen spinach thawed and well drained (optional)

Instructions
 

  • Preheat the oven to 375°F (191°C).
  • If using frozen spinach, thaw and squeeze out excess water. If using broccoli, blanch in boiling water for 1-2 minutes until bright green.
  • In a large bowl, combine chicken, bacon, drained spinach or broccoli, garlic, ranch dressing, and half of the mozzarella and cheddar cheeses. Stir well.
  • Transfer mixture to a 9x13 inch casserole dish or mix directly in the dish.
  • Optional: Add 1-3 teaspoons ranch seasoning mix for extra flavor.
  • Top with the remaining shredded mozzarella and cheddar cheeses.
  • Bake for about 15 minutes until hot and bubbly.

Notes

  • Leftovers keep 3-5 days refrigerated.
  • Assemble ahead for meal prep or freeze up to 3 months.
  • Substitute broccoli or spinach as preferred.
  • Add ranch seasoning for stronger flavor.
