- 1 lb boneless skinless chicken breasts or thighs, cut into bite-size pieces
- 1 tablespoon olive oil or butter
- Salt to taste
- Black pepper to taste
- ½ teaspoon garlic powder optional
- 8 to 12 oz egg noodles
- 4 tablespoons butter
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper
- ¼ cup grated Parmesan cheese optional
- Chopped parsley optional garnish
Bring a large pot of salted water to a boil.
Cook egg noodles until tender according to package instructions, then drain and set aside.
Heat olive oil or butter in a large skillet over medium heat.
Add chicken pieces, season with salt, pepper, and garlic powder if using.
Cook the chicken 6 to 8 minutes, stirring occasionally, until golden and cooked through. Remove from heat.
Return cooked noodles to the pot or skillet and add butter. Stir until butter melts and noodles are evenly coated.
Season noodles with salt and pepper.
Add cooked chicken to the buttered noodles and toss gently to combine and warm through.
