Ingredients
  

  • 1 lb boneless skinless chicken breasts or thighs, cut into bite-size pieces
  • 1 tablespoon olive oil or butter
  • Salt to taste
  • Black pepper to taste
  • ½ teaspoon garlic powder optional
  • 8 to 12 oz egg noodles
  • 4 tablespoons butter
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese optional
  • Chopped parsley optional garnish

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Cook egg noodles until tender according to package instructions, then drain and set aside.
  • Heat olive oil or butter in a large skillet over medium heat.
  • Add chicken pieces, season with salt, pepper, and garlic powder if using.
  • Cook the chicken 6 to 8 minutes, stirring occasionally, until golden and cooked through. Remove from heat.
  • Return cooked noodles to the pot or skillet and add butter. Stir until butter melts and noodles are evenly coated.
  • Season noodles with salt and pepper.
  • Add cooked chicken to the buttered noodles and toss gently to combine and warm through.
  • Serve hot topped with grated Parmesan cheese and chopped parsley if desired.

Notes

  • Use cream or milk with butter for extra creaminess.
  • Add minced garlic to butter for garlic butter flavor.
  • Include peas, spinach, or mushrooms for added veggies.
  • Swap chicken with rotisserie or leftover grilled chicken for convenience.
