Ingredients
  

  • 1 cup rolled oats
  • cups milk dairy or plant-based
  • Pinch of salt
  • 1 egg
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • Fresh berries optional
  • Sliced bananas optional
  • Chopped nuts optional

Instructions
 

  • Combine oats, milk, and salt in a saucepan and cook over medium heat, stirring occasionally until creamy, about 5 to 7 minutes.
  • In a bowl, whisk together the egg, honey or maple syrup, and vanilla extract.
  • Gradually whisk in a few tablespoons of hot oatmeal into the egg mixture to temper the egg and prevent scrambling.
  • Return the tempered mixture to the saucepan and cook on low heat, stirring constantly until thick and custard-like, about 2 to 3 minutes.
  • Remove from heat, serve in bowls, and top with fresh berries, sliced bananas, and chopped nuts as desired.

Notes

  • Keep heat low after adding egg to prevent scrambling.
  • Use plant-based milk for a dairy-free version.
  • Add cinnamon or nutmeg for extra warmth and flavor.
