- 1 cup rolled oats
- 1½ cups milk dairy or plant-based
- Pinch of salt
- 1 egg
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
- Fresh berries optional
- Sliced bananas optional
- Chopped nuts optional
Combine oats, milk, and salt in a saucepan and cook over medium heat, stirring occasionally until creamy, about 5 to 7 minutes.
In a bowl, whisk together the egg, honey or maple syrup, and vanilla extract.
Gradually whisk in a few tablespoons of hot oatmeal into the egg mixture to temper the egg and prevent scrambling.
Return the tempered mixture to the saucepan and cook on low heat, stirring constantly until thick and custard-like, about 2 to 3 minutes.
Remove from heat, serve in bowls, and top with fresh berries, sliced bananas, and chopped nuts as desired.
- Keep heat low after adding egg to prevent scrambling.
- Use plant-based milk for a dairy-free version.
- Add cinnamon or nutmeg for extra warmth and flavor.
