- 2 tbsp butter or olive oil
- 1 small onion finely chopped
- 2 –3 garlic cloves minced
- 3 cups fresh spinach
- 1 cup heavy cream or dairy-free alternative
- ½ cup grated Parmesan cheese optional
- ¾ –1 cup crumbled feta cheese
- Salt and freshly ground black pepper to taste
- Optional: red pepper flakes for heat
Bring a large pot of salted water to a boil, add gnocchi, and cook until they float; drain and set aside.
Heat butter or oil in a large skillet over medium heat; sauté chopped onion until soft, about 3–4 minutes.
Add minced garlic to the skillet and cook for 1 minute more.
Add fresh spinach and cook, stirring frequently, until wilted.
Pour in heavy cream and simmer until slightly thickened, about 2–3 minutes; stir in Parmesan cheese if using.
Add the cooked gnocchi to the creamy sauce and toss gently to coat.
Stir in crumbled feta cheese and season with salt, pepper, and red pepper flakes if desired.
Serve warm, optionally garnished with extra feta or black pepper.
