Ingredients
  

  • 1 lb potato gnocchi
  • 2 tbsp butter or olive oil
  • 1 small onion finely chopped
  • 2 –3 garlic cloves minced
  • 3 cups fresh spinach
  • 1 cup heavy cream or dairy-free alternative
  • ½ cup grated Parmesan cheese optional
  • ¾ –1 cup crumbled feta cheese
  • Salt and freshly ground black pepper to taste
  • Optional: red pepper flakes for heat

Instructions
 

  • Bring a large pot of salted water to a boil, add gnocchi, and cook until they float; drain and set aside.
  • Heat butter or oil in a large skillet over medium heat; sauté chopped onion until soft, about 3–4 minutes.
  • Add minced garlic to the skillet and cook for 1 minute more.
  • Add fresh spinach and cook, stirring frequently, until wilted.
  • Pour in heavy cream and simmer until slightly thickened, about 2–3 minutes; stir in Parmesan cheese if using.
  • Add the cooked gnocchi to the creamy sauce and toss gently to coat.
  • Stir in crumbled feta cheese and season with salt, pepper, and red pepper flakes if desired.
  • Serve warm, optionally garnished with extra feta or black pepper.

  • Substitute goat cheese or ricotta for different flavors.
  • Try kale or arugula instead of spinach for variety.
  • Adjust cream quantity for desired sauce thickness.
