Ingredients
  

  • 3 to 4 lb potatoes peeled and diced
  • 1 cup sour cream
  • 1 can 10.5 oz condensed cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 small onion finely chopped
  • 2 to 3 garlic cloves minced
  • Salt and freshly ground black pepper to taste
  • Optional: chopped green onions or parsley for garnish

Instructions
 

  • Place diced potatoes in the bottom of the crockpot.
  • In a bowl, combine sour cream, condensed cream of chicken soup, milk, chopped onion, minced garlic, salt, and pepper; stir until smooth.
  • Pour the sauce mixture over the potatoes and gently stir to coat evenly.
  • Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until potatoes are tender.
  • About 15 to 20 minutes before serving, sprinkle shredded cheddar cheese over the top; cover and cook until melted and bubbly.
  • Gently stir to combine cheesy potatoes and garnish with chopped green onions or parsley if desired; serve warm.

Notes

  • Use waxy or all-purpose potatoes for firmer texture, russet for creamier dish.
  • Add Worcestershire sauce or paprika for extra flavor.
  • Mix in cooked bacon bits or sautéed mushrooms for heartiness.
  • Pairs well with grilled chicken, ribs, or BBQ mains.
