- 3 to 4 lb potatoes peeled and diced
- 1 cup sour cream
- 1 can 10.5 oz condensed cream of chicken soup
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 small onion finely chopped
- 2 to 3 garlic cloves minced
- Salt and freshly ground black pepper to taste
- Optional: chopped green onions or parsley for garnish
Place diced potatoes in the bottom of the crockpot.
In a bowl, combine sour cream, condensed cream of chicken soup, milk, chopped onion, minced garlic, salt, and pepper; stir until smooth.
Pour the sauce mixture over the potatoes and gently stir to coat evenly.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until potatoes are tender.
About 15 to 20 minutes before serving, sprinkle shredded cheddar cheese over the top; cover and cook until melted and bubbly.
Gently stir to combine cheesy potatoes and garnish with chopped green onions or parsley if desired; serve warm.
