- 3 lb baby potatoes or Yukon Gold potatoes halved or cut into chunks
- 3 tablespoons olive oil
- 3 to 5 garlic cloves minced
- ½ teaspoon dried thyme optional
- ½ teaspoon dried oregano or basil optional
- Salt and freshly ground black pepper to taste
- ⅓ cup grated Parmesan cheese
- 1 to 2 tablespoons butter optional
- Fresh parsley chopped (optional)
Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper or a light grease.
Rinse and dry the potatoes, then cut them into bite-sized pieces for even cooking.
In a large bowl, toss potatoes with olive oil, minced garlic, thyme, oregano or basil, salt, and pepper until evenly coated.
Spread the potatoes evenly on the baking sheet and roast for 25 to 30 minutes, stirring halfway until golden and crisp.
Remove the potatoes briefly from the oven and sprinkle Parmesan cheese on top; add butter pieces if using.
Return to the oven for 3 to 5 minutes until the cheese melts and sticks to the potatoes.
Transfer the potatoes to a serving dish and garnish with chopped fresh parsley, if desired. Serve hot.
