Ingredients
  

  • 3 lb baby potatoes or Yukon Gold potatoes halved or cut into chunks
  • 3 tablespoons olive oil
  • 3 to 5 garlic cloves minced
  • ½ teaspoon dried thyme optional
  • ½ teaspoon dried oregano or basil optional
  • Salt and freshly ground black pepper to taste
  • cup grated Parmesan cheese
  • 1 to 2 tablespoons butter optional
  • Fresh parsley chopped (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper or a light grease.
  • Rinse and dry the potatoes, then cut them into bite-sized pieces for even cooking.
  • In a large bowl, toss potatoes with olive oil, minced garlic, thyme, oregano or basil, salt, and pepper until evenly coated.
  • Spread the potatoes evenly on the baking sheet and roast for 25 to 30 minutes, stirring halfway until golden and crisp.
  • Remove the potatoes briefly from the oven and sprinkle Parmesan cheese on top; add butter pieces if using.
  • Return to the oven for 3 to 5 minutes until the cheese melts and sticks to the potatoes.
  • Transfer the potatoes to a serving dish and garnish with chopped fresh parsley, if desired. Serve hot.

Notes

  • Avoid overcrowding the pan for extra crispiness.
  • Try adding rosemary or Italian seasoning for extra flavor.
  • Substitute Parmesan with pecorino for a sharper taste.
  • Air fryer option: cook at 375–400°F for about 20 minutes, shaking halfway.
