Ingredients
  

  • 1 lb cooked chicken breast diced or shredded
  • 1 medium cucumber diced
  • 2 medium tomatoes diced
  • 1/4 red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and halved
  • 4 oz feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Combine cooked chicken, cucumber, tomatoes, red onion, and olives in a large bowl.
  • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, oregano, garlic powder, salt, and pepper.
  • Pour the dressing over the salad ingredients and toss gently to coat evenly.
  • Sprinkle crumbled feta and chopped parsley on top and toss lightly to combine.
  • Serve immediately or refrigerate for 20 to 30 minutes to allow flavors to meld.

  • Use grilled or roasted chicken for deeper flavor.
  • Add diced bell peppers for extra crunch.
