Ingredients
  

  • 1 lb ground beef
  • 1 large sweet potato peeled and cubed
  • 2 medium zucchinis diced
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Heat olive oil in a large skillet over medium heat and sauté the chopped onion until softened, about 2 to 3 minutes.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Add ground beef to the skillet, break it up with a spoon, and cook until browned and fully cooked. Drain excess fat if necessary.
  • Stir in cubed sweet potatoes. Season with smoked paprika, oregano, salt, and pepper. Cover and cook for 8 to 10 minutes, stirring occasionally, until sweet potatoes soften.
  • Add diced zucchini and cook uncovered for 4 to 5 minutes until zucchini is tender yet slightly crisp and sweet potatoes are fully cooked.
  • Remove from heat, garnish with fresh parsley, and serve warm.

  • Cut sweet potatoes into uniform small cubes for even cooking.
  • Enhance flavor with chili flakes, cumin, or garlic powder.
