- 1 1/2 cups whole-wheat flour or all-purpose
- 1 teaspoon baking powder
- 1/2 teaspoon salt adjust to taste
- 1/2 teaspoon garlic powder optional
- 1/2 teaspoon paprika or smoked paprika optional
- 1 to 1 1/4 cups shredded sharp cheddar cheese
- 3 tablespoons cold unsalted butter cubed
- 3 to 4 tablespoons cold water adjust as needed
- 1 to 2 teaspoons dried herbs oregano, thyme, rosemary (optional)
- A pinch of black pepper optional
- Sesame or chia seeds for sprinkling optional
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine flour, baking powder, salt, garlic powder, and paprika if using.
Stir in shredded cheese, then add cold cubed butter and rub it into the mixture with your fingertips until it resembles coarse crumbs.
Add cold water a tablespoon at a time, mixing gently until a soft dough forms that holds together without being sticky.
Roll the dough out on a lightly floured surface to about 1/8 to 1/6 inch (3–4 mm) thick for crisp crackers.
Cut the dough into desired shapes using a knife or cookie cutter and arrange them on the prepared baking sheet, spacing slightly apart.
If desired, prick each cracker lightly with a fork for even baking and optionally sprinkle with seeds or dried herbs.
Bake for 12 to 15 minutes or until the edges are golden and crackers are crisp, watching closely to avoid burning.
Cool crackers completely on a rack to allow them to crisp up further before serving.
