Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3-4 garlic cloves minced
  • 3 large carrots sliced
  • 3 celery stalks sliced
  • 3-4 medium potatoes diced
  • 1 parsnip peeled and sliced (optional)
  • 1 small leek cleaned and sliced (optional)
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • Optional: 1 cup pearl barley or diced tomatoes

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute.
  • Add carrots, celery, potatoes, parsnip, and leek if using. Stir and cook for 3 to 4 minutes.
  • Pour in vegetable broth and add thyme, parsley, bay leaf, salt, and pepper.
  • Add pearl barley or diced tomatoes if using.
  • Bring stew to a boil, then reduce heat to low. Cover and simmer for 25 to 30 minutes until vegetables are tender.
  • Remove bay leaf, adjust seasoning if needed, and serve warm.

Notes

  • Pearl barley adds heartiness and texture.
  • Try turnips, mushrooms, or sweet potatoes for variations.
  • Add fresh herbs before serving to brighten flavors.
  • Serve with crusty bread or side salad for a complete meal.
