- 2 tbsp olive oil
- 1 large onion chopped
- 3-4 garlic cloves minced
- 3 large carrots sliced
- 3 celery stalks sliced
- 3-4 medium potatoes diced
- 1 parsnip peeled and sliced (optional)
- 1 small leek cleaned and sliced (optional)
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 bay leaf
- Salt and freshly ground black pepper to taste
- Optional: 1 cup pearl barley or diced tomatoes
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
Stir in minced garlic and cook for another minute.
Add carrots, celery, potatoes, parsnip, and leek if using. Stir and cook for 3 to 4 minutes.
Pour in vegetable broth and add thyme, parsley, bay leaf, salt, and pepper.
Add pearl barley or diced tomatoes if using.
Bring stew to a boil, then reduce heat to low. Cover and simmer for 25 to 30 minutes until vegetables are tender.
Remove bay leaf, adjust seasoning if needed, and serve warm.
