Ingredients
  

  • 2 cups plain or vanilla Greek yogurt
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons key lime juice or fresh lime juice
  • 1 teaspoon lime zest
  • ½ teaspoon vanilla extract
  • ½ cup crushed graham crackers
  • 2 tablespoons shredded coconut optional
  • 1 –2 tablespoons white chocolate chips optional
  • Extra lime zest for garnish

Instructions
 

  • Whisk together Greek yogurt, honey, key lime juice, lime zest, and vanilla extract in a mixing bowl until smooth and creamy.
  • Line a baking sheet with parchment paper and spread the yogurt mixture evenly about ¼ inch thick.
  • Sprinkle crushed graham crackers evenly over the yogurt base.
  • Add shredded coconut and white chocolate chips if desired, then finish with a light sprinkle of lime zest.
  • Freeze the baking sheet for at least 3 to 4 hours until the yogurt bark is completely firm.
  • Remove from freezer and break into pieces to serve immediately or store in an airtight container in the freezer.

Notes

  • Add extra honey for a sweeter bark.
  • Enhance lime flavor with more zest or lime extract.
  • Store in freezer up to 2 weeks.
  • Let sit 1–2 minutes at room temperature before eating for best texture.
